Restaurant Chains Push Small Plate Menus

Chain restaurants are getting behind the “small plate,” reports USA Today. I assumed on seeing that headline that they were responding to concerns about obesity. But the focus seems to be more on budget than health. The small plates are typically priced below the cost of appetizers as a way to lure cash-strapped customers.
